Day 42

I love vegetables, always have and always will…but I am still pleasantly surprised that I can be caught off guard by loving one that I never really gave much attention to before.  I decided to make Brussel Sprouts for the very first time tonight.  I don’t know what made me avoid these in the past, I mean…I LOVE CABBAGE!  As a kid, I would beg my grandma to make me a HUGE bowl of her cabbage salad every time we went there for dinner!  And I can safely say…I pretty much finished the entire bowl every time! :) So why did I avoid these adorable mini cabbages!?!?

I cut each brussel sprout in half and trimmed the bottoms, before lightly coating them with extra virgin olive oil, fresh cracked pepper, and a bit of fresh ground sea salt.  I put them in the oven on a cookie sheet at 400 degrees for 15 minutes and out came perfect little roasted brussel sprouts!  DELICIOUS!!
